I love a good bean or vegetable patty burger, and get sad that so many restaurants that used to have great bean patties are switching over to the impossible burger instead.
Saving this post, emailing it to myself, memorizing every word... I've been a vegetarian for a year and have been struggling with hitting the "healthy vegetarian" stride the last few months while trying to stay afloat with my job and kids' after-school activities. I love Hettie's recipes as well, and am going to check out the other cookbooks you recommended. Thank you for the inspiration!

Thank you for these very practical suggestions! I am in the "mostly prefers to eat vegetarian" camp even though I've never made the full switch. Another cookbook I've loved for years is Deborah Madison's Vegetarian Cooking For Everyone. I use it like some people use (or used in earlier generations) The Joy of Cooking - a great first stop planning any meal.
